Switched the style up a little bit with a lower slower bake for a coal oven type bake. @breville hacker mode settings 600f deck 700f top heat. Baked for about 4 min. @cairnspringmills blended with a little @kingarthurflour AP no fat, low starter percentage and 24hr all at room temp. Everyone was very happy with pizza night tonight. Recipe below.
600g flour 100% (200g kaap 400g glacier peak cairnsprings)
396g water 66%
30g starter 5%
18g salt 3%
Weigh out all ingredients with a scale.
Hand mix flours and salt, form a well and pour in water and starter. Mix to combine.
Rest 30 min. In bowl covered with wrap.
Stretch and fold for 3 min then wrap. (7pm)
10am ball dough into 245g dough balls shape and put on lightly floured sheet tray. Cover with plastic wrap. Continue to proof at room temp.
7hrs later make pizza.
