Moroccan spiced veggies :with cauli rice...
Hope everyone is doing great ,enjoying the beauty of nature..be it heat ,humidity or cold.
So guys,today I have replicated the lightly spiced vegetables which I had used in my Mediterranean Buddha bowl earlier ..with a little twist to make it a complete meal..full of fibres,proteins and healthy carbs..
Recipe as follows:
-3cups finely chopped vegetables
(Pumpkin,courgette,spring onions,peppers,carrots,celery stalk)
-1cup boiled lentils -3-4 juicy tomatoes finely chopped
-1tablespoon mix of ground spice powder
-salt to taste
-1tablespoon olive oil -Finely chopped parsley& 3-4 strands of saffron garnishing
-3cups cauliflower florets
1)Heat oil in a big pot,lightly sauté the spring onions,garlic and then the tomatoes with salt so as to bring out the flavours...cook for a minute or two.Add in the spice mix ,stir well and gradually add 2cups of water so as to make a thick gravy.
2)Add in all the other vegetables and mix well...
3)Add the lentils and let it simmer for 25-30minutes..
4)Check the seasoning and adjust as per your taste.
5)For the rice,just put the cauliflower florets in a mixie and pulse for 15-30seconds till broken into small grain like structures or grate it almost vertically ..so as not to have long strands..
I am sorry couldn’t take a picture of that but I am sure there are enough videos of that on YouTube .
6)Place the prepared cauli in a shallow bowl and microwave it for 45 seconds till lightly steamed and fluffy.
This dish could be served as a plant based tajine too..
