Since going more plant-based, I’m eating a lot more variety. I feel great and I can definitely tell a big difference on the days I eat clean versus processed foods. I can definite say that your body needs quality not quantity. I hear a lot of people say that eating healthy is expensive, but it really is not when you truly focus on food as fuel. You begin to think clearly and listen to your body and feed it exactly what it needs. (Not sugary processed food but foods that will nourish) •

It requires discipline and consistency, but in the end the reward is the feeling of accomplishment, higher self-esteem and energy. (No gimmicks, no caffeine) •

We opt for CHICKPEA nuggets rather than  chicken nuggets. Even though chicken seems to be a go-to meat, touted for its leanness and protein, it’s actually not as healthy for you - or the planet - as you might think. 🐔 .

1) Poultry can have the same impact on cholesterol as red meat does. It’s still a high-fat food. 
2) Birds are exempt from the Humane Methods Slaughter Act, which means that once chickens get to the slaughterhouse they are hung upside down and have their throats sliced open then dipped into scalding hot water for feather removal - and they are fully conscious throughout the entire process. 😢 
3) 97% of retail chicken is contaminated with dangerous bacteria that can make you sick. You can’t cook them off, they survive high heat. 
4) Chickens are stuffed with cancer-causing arsenic, a highly poisonous chemical that is 4x more toxic than mercury. When ingested, arsenic can lead to invasive squamous carcinoma, basal cell skin cancer, and cancers of the liver, kidney, lungs, and bladder. 
5) Poultry slaughterhouses release large amounts of waste into the environment which transfers into groundwater making drinking water toxic. The toxic runoff also finds its way to streams and rivers polluting the nation’s waterways. 
6) And before you think free-range organic is any better, in reality, 99.9% of chicken sold is factory raised. But even if they have been raised “free-range”, the truth is, these chickens spend just as much time confined in crowded spaces which leads to sharing and spreading of disease amongst the chickens. .

Reducing beef consumption is an effective way of curbing global emissions. But why is beef so bad? "The feed is largely produced using lots of pesticide and fertilizer, which requires fossil fuels," explains Sujatha Bergen, one of the authors of the study. "Also, the digestive system of the cows produces methane, which is 25 times more potent a greenhouse gas than carbon dioxide. And the manure emits additional greenhouse gases."
Lamb – For each kilo of lamb meat consumed, there are 22.9 kilos of emissions, the NRDC study estimates.
Meat production also requires large amounts of animal feed, mainly the resource-intensive corn and soy. The synthetic fertilizer and the manure used to grow these also releases nitrous oxide, a climate-warming pollutant 298 times more powerful than carbon dioxide.
Butter – The third most damaging food, by some distance, is butter: one kilo of butter equals nearly 12 kilos of CO2 -- about half as many as beef. It belongs to the same supply chain, making dairy and beef cattle an environmentalist's nightmare.

🥗😍 Gorgeous Nourishing bowl! 📷 by @plantbasedrd 🚨🚨with: red lettuce, minced basil, sliced cherry tomatoes, avocado, blackberries, hemp seeds, and roasted adobo chipotle chickpeas. Just drizzled a little fruit infused vinegar, but balsamic vinegar works really well too. 
Roasted Adobo Chipotle Chickpeas
1 can chickpeas, rinsed and drained
1/2 tsp adobo
1/4 tsp chipotle powder
Salt and pepper based on preference

Place chickpeas in a bowl and dab with a clean towel or paper towel to remove excess moisture from chickpeas. Add seasonings and toss together. Add chickpeas to an airfryer at 370F for 15mins OR heat oven to 400F and roast for 10 minutes, stir half way through and roast for an additional 10-15 minutes. Once cooked just allow to cool completely so they crisp up.

Roasted Adobo Chipotle Chickpeas

Today was a beautiful, hot, sunny day in Amsterdam, probably (one of) the last this year and I soaked in every bit of the sun that I could.
Loving this weather and not ready yet to say goodbye to my favorite season.

Today was a beautiful, hot, sunny day in Amsterdam, probably (one of) the last this year and I soaked in every bit of the sun that I could.
Loving this weather and not ready yet to say goodbye to my favorite season.
I know, it's already mid September, but I could just live in eternal summer all year long. I've lived in really hot climates for half of my life and I thrive in heat. 🔥☀️ Sometimes lots of sun can be a bit much on my skin though, so I like to give it some extra care.

Chili pan mee '辣椒板面' with homemade noodles & tofu crumbles⁣😋
⁣Happy Saturday, everyone. Anyone love homemade noodles? Me!!😁
Pan mee is a Cantonese word that translates to pan 'wood', mee 'noodles', originated from Hakka, where a wooden block was used as ruler to cut the noodles. I used pasta machine🤭
⁣
Recipe (serves 4):⁣
🍃Noodle ingredients:⁣
~ 2 cups all purpose flour, 3 tablespoons aquafaba, 1/4 cup + 2 tablespoons ice cold water, 1/4 tsp salt⁣
✔️Place all ingredients in a bowl & knead (with hand) until a dough forms (mixer works too). Cover with damp paper towel & let rest for 30 minutes. Divide dough into 4 equal parts. Using a pasta machine, run one dough through a dough thinner a few times, then change settings to cut. Cut dough into long noodles & coat noodles well with flour to prevent sticking. Boil a pot of water with a pinch of salt & cook noodles until al dente about 3 minutes. Homemade noodles has shorter cooking time.⁣😊
⁣🍃Tofu crumbles:⁣
~ 1 pack of firm tofu (drained, pat dry, mashed)⁣, 3 caps of mushrooms (soaked until soft and sliced)⁣
~ 5 cloves garlic (minced), 3-4 shallots (minced)⁣
~ oil and additional salt if needed⁣
🍃Sauce: 1.5 tablespoon soy sauce, 1.5 tablespoons stir fry sauce, 2 teaspoons dark soy sauce, 2 teaspoons sugar, 1 teaspoon salt⁣
✔️In a heated non-stick pan, dry tofu crumbles until lightly brown, then add 1 teaspoon oil &continue to cook until tofu looks chewy/spongy, push aside. Add another teaspoon oil & sauté mushrooms until cook. Then, add shallots, garlic & cook until fragrant. Add sauce & continue to stir until tofu absorbs all the sauce. ⁣
⁣🍃Garnish: Blanched yu choy/bok choy, fried shallots, chili crisp (used @flybyjing chili crisp. Thank you for the delicious sauce🙏🏻)⁣

Tomorrow I'm starting another 15 day raw food diet/reboot/detox/cleanse sooo of course several glasses of wine last night and a whole vegan pizza today, as a send off 😏 this is one of the best vegan pizzas I've ever had (that I didn't make myself). Pesto base, non dairy cheese, zucchini, green pepper & mushroom + only green olives for Jax 😴 lol.

Base
50g raw, unsalted almonds
55g pitted Medjool dates
30g desiccated coconut
10ml canned coconut milk (light)
10ml filtered water
Filling
50g pitted dates
40g cashew butter (unsalted, no added sugar)
10ml canned coconut milk (light)
1 tsp. vanilla extract
pinch Himalayan salt
Top
22ml extra virgin coconut oil
20g cacao powder
10g rice malt syrup
15ml water
Directions

Prepare a shallow baking pan by lining with baking paper
Base
Soak the dates in water for 3-5 minutes to soften
While the dates are soaking, add the almonds, coconut, canned coconut milk and water into a food processor and process until the mixture becomes crumbly
Add the soaked dates and continue processing until the mixture feels sticky
Transfer the mixture to the baking dish, and press down firmly on the bottom of the dish. Freeze for half an hour
FIlling
Soak the dates in water for 3-5 minutes to soften then transfer to a food processor
Add the remaining ingredients into a food processor and process until it becomes smooth and creamy. You will need to scrape the sides a few times, to ensure the dates are all blended with the cashew butter
Evenly spread the caramel filling over the base
Refrigerate for 1 hour to set
Chocolate Layer
Combine the chocolate topping ingredients in a bowl
Evenly pour over the caramel filling
Refrigerate for a further 1 hour
Once the caramel slice is set, cut into 5 slices
Serve 1 slice and refrigerate the leftover slices to be consumed as a snack leftover

Here’s what I’ve learned:

There’s ease in my home and work life, when I give myself the care of focused planning ahead. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
There’s more peace in my relationships, when I set aside quiet, alone time, to move, breathe, and rest. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
By taking care of yourself, you make the choice to give the world, your family, and the people in your life, what’s best of you, instead of what’s left of you!

Massage therapy is one of my favorite parts of the upcoming women’s wellness weekend (link in bio)!

Our massage therapist, Ragan has always had a healing touch and started learning about massage at a young age. By the age of 12 she was already helping family members and friends feel better and discovering her passion for the art. Having a natural ability, Ragan graduated from Alpha Health Massage Institute in Knoxville in 2001 and moved to Nashville soon after to start her business. Ragan has experience in many different modalities of massage including chair work, lymphatic, Swedish, Neuromuscular, sports and hot stone. She continues to learn new things about massage and years of positive feedback have led Ragan to focus her efforts on a combination of Swedish and Neuromuscular techniques.

I also had buffalo cauliflower dip & vegan red velvet cake. Best vegan joint I’ve been to, the food was AMAZING !!!!!

1st 1/2 marathon in the books! Was happy I was even able to run due to a nagging hip injury, @kttape did wonders! Was hoping to be a bit faster but was happy I was even able to cross the finish line, made a few rookie mistakes. Finished at 2hrs 9 seconds. Only a few minor toe injuries 😆 . Now I’ll have to do another one to beat this time 🤔#nextyear #journeytohalfmarathon #halfmarathon #paliosaratoga #running #run #fitness #distancerunning #halfcrazy #womenwhorun #endurance #plantbased #vegan #veganathlete #runsonplants

It took therapy, community support, and a lot of time for me to even consider walking down this road again.

My heart goes out to mamas who endure pregnancy or infant loss, just to go on and struggle with secondary infertility or hormonal imbalances.

After a few years, we tried… and lost again.

I never thought I’d be here, because in the midst of loss I felt exhausted, guilty, broken,
And alone.

Now that we’re on the other side;
I’d like to use my experiences and training, to support women in the middle of it.

(If you are going through tough times relationally, you are more likely to reach for ice cream than broccoli!) 🙌Are you developing a spiritual practice that connects and inspires you? 🧘‍♀️Are you incorporating fulfilling movement and self-care? 🥗What are you putting in your mouth for nutrition, or lack thereof? And why? How are you talking to yourself about food and life? 
Begin to notice that inner voice. (Be gentle with yourself…this is a process!) 2. Crowd Out by Adding In! Don't practice restrictive processes that create negative patterns. Work to crowd out the things that aren't working for you by adding in practices that nourish you!

3. Celebrate your accomplishments non-food rewards. Make it through another week? Enjoy a spa day, go for a quiet walk, or come join us for the Women’s Wellness Weekend Nov 7-10!

🍫🍰 VEGAN FLOURLESS CHOCOLATE BREAKFAST CAKE! 📷 by @tumblinbumblincrumblincookie 🚨🚨Recipe: 3/4 cup rolled oats
1/4 cup cocoa powder
3 tbs coconut sugar
1 tsp baking powder
1.5 tbs pumpkin puree (can use mashed banana/applesauce)
1 flax egg
1/4 cup almond milk
2 tbs nut butter
1/2 tsp vanilla
pinch salt
optional: handful of choco chips

Preheat your oven to 180 degrees Celsius and prepare a small tin by greasing it well and lining with parchment paper. Prepare your flax egg as well.
Blend rolled oats until a flour-like consistency (or use oat flour). Mix in cocoa powder, baking powder and coconut sugar. Stir in pumpkin puree, flax egg, almond milk,  vanilla and peanut butter. Batter should be thick and fudgy! 
Bake at 180 degrees Celsius for about 25-30 minutes until the middle springs back to the touch -- it should be a little damp in the middle when a skewer comes out. cool completely in the pan on a wire rack and let chill overnight for maximum fudginess.

Made some snickerdoodles & they. are. amazing. I made em’ for my grandparents during the summer because they never had cookies before?? And so, clearly, that needed to change 👼🏼 they’re super chewy + crispy on the edges. The recipe is linked in my bio!

15 minutes montre en main, et encore j’ai soigné la présentation ! J’ai pioché dans le congélateur des falafels et des gaufres de courgettes que j’ai réchauffé au four, une cuillère de chou rouge et de carottes lactofermentés, du houmous nature et du houmous à la betterave rôtie, du chou rouge à la danoise, du caviar de poivron rouge, de la betterave rôtie au four et un peu de tartare d’algue, le tout sur de la salade verte. Le secret c’est le batch cooking 😉 préparer plusieurs portions qu’on garde dans le frigo dans les bocaux de récup et dans lesquels on pioche pour composer un veggie bowl équilibré et coloré. .
On mange d’abord avec les yeux 😉

When you can’t decided between rocky road or tiffin bars - combine the two to make Soph’s chocolate rocky type tiffin bars (I seriously need to think of a shorter name for these 🍫). I adore making tiffin bars as the combinations are endless and it’s a great way to use up random biscuits, cover them in a sweet syrup and top with a thick layer of melted chocolate. 🍫Plus it’s great to ‘unbake’ at times - if that’s even a thing. 🍰
For the bars you’ll need - 🌱
150grams of crushed digestives 
45grams raisins
25grams marshmallows
6 tbsp of dairy free spread
3 tbsp sugar
4 tbsp of golden syrup
50grams chopped dark chocolate
3 tbsp of cocoa powder
100grams melted dark chocolate 
200grams of melted white chocolate (I use Sainsbury’s free from bar) 
2 tbsp coconut oil

Method - 🥣
To a large baking bowl add in the crushed biscuits, raisins, marshmallows, chopped dark chocolate, mix well and set aside. Heat a pan over low heat and add in the dairy free spread, sugar and golden syrup, simmer until the sugar has dissolved and you have a sticky syrup, which should roughly take 3-4 minutes. Remove from the heat and sprinkle in the cocoa powder and gently stir until the powder has combined with the syrup. Once combined, pour over the crushed biscuit mix ensuring you evenly coat the pieces. Transfer to a lined baking tray and place in the fridge for 15-20 minutes. ❄️
While you’re waiting, add the white chocolate to a breakfast bowl with 1tbsp of coconut oil and heat in the microwave in 30 second bursts until fully melted, repeat with the dark chocolate. Remove the set rocky road from the fridge and pour over the melted white chocolate, with a spoon or knife add your arty swirl with the dark chocolate and place back in the fridge until the chocolate top has set, around 15 minutes. ❄️
Once fully set, cut to your desired bar size and Ta dah! Sticky sweet rocky road tiffin bars. 🍫
These are a complete mess to eat so I’d recommend eating them with a fork or have a napkin/tissue nearby.

CHICKPEA NOODLE SOUP ✨ The rainy weather + my cold have me craving alll the comforting soups today, and this one is one of my favourites.

To make 👇🏼:
Chop 1 yellow onion, 4 cloves of garlic, 3 stalks of celery + 3 carrots. Sauté on medium heat for ~5 minutes until onion is translucent. Add 1 tsp dried parsley, 1/2 tsp dried oregano, 1/4 tsp dried thyme, 1/2 tsp dried sage, + 1/2 tsp salt and pepper (or all to taste). Sauté again until combined, then add 1 can of drained and rinsed chickpeas + 6 cups of low sodium vegetable stock. Simmer for ~15 minutes until carrots and celery are softened and flavours have developed. Add your favourite pasta (here I used about 300g brown rice fettuccine) and add directly to soup and cook as per package instructions. Serve and enjoy! 💛
