It's absolutely no secret that I love Indian cuisine 馃挏 and whenever I feel under the weather it's my go to meal - warms me up, not to mention all the healthy properties of ginger, turmeric or garlic and onions! 馃嵅馃憣

Today is one of those poorly days... but there was NO naan in the whole house, to accompany my squash & carrot curry! It was the time. THE time to finally make naan bread from scratch 馃挭 馃敼
Went straight to my trusted in that topic @amandip_uppal and her "India made easy" 馃搾 Made according to the plain naan recipe, but added garlic powder & dry coriander leaves to the flour mix 馃憣馃槉
Few things to sum it up:
- so easy to make
- waaay better than the shop bought version (taste wise and when it comes to ingredients)
- cheaper than shop bought
- no plastic packaging anywher
- can easily be made vegan, omit ghee and use plant butter or oil instead
- will never ever again buy naan bread!!! 馃槄

This is the 鈥淥ne-Pot Cauliflower Dal Green Curry鈥 from @minimalistbaker! It was such a quick and easy recipe to make one night after my Barre class. It consisted of lentils and cauliflower with a green curry sauce. I served it alongside some rice and FUN FACT - Trader Joe鈥檚 has vegan naan! I鈥檝e been on the hunt for a ghee-less naan forever and I鈥檝e finally found it! Locations vary so always double check the ingredients, but this help complete the dish for sure.

went for brunch today at @sixbrighton - I had their vegan breakfast which was sourdough toast topped with guacamole, beetroot hummus, a hash brown, falafel, tomatoes, mushroom and purple potato, served with beans (obviously) and an oat cappuccino- so delicious and filling 鉁ㄢ仯

Vegan Shortcrust pastry :
Ingredients.
* 2 1/4 cups (320g) flour.
* 3/4 tsp baking powder.
* 1/4 tsp salt.
* 6 tablespoons (90ml) sunflower or olive or grape seed oil.
* 6 tablespoons (90ml) water or non-dairy milk.
Method.
 Into a large bowl add the flour, baking powder and salt.
 Add the oil. Start working with your fingers and mix the oil around.  Add the water. Press the moistened flour mixture to form a dough. Once a smooth ball is formed, you can keep it in fridge for 15 min before using it.  Roll out the dough on baking paper to the size you like . .
Put fresh plums on tart and bake it 200 degrees for 15 -20 min. 馃尡

Voc锚 vai precisar de:

Sun Dried Tomato and Coconut Braised Chickpeas served with quinoa 馃槏馃槏
馃摳: @tastingtothrive_rd 
Ingredients:
1 medium onion
4 garlic cloves
2 tbsp minced ginger
1 can of chickpeas (drained, rinsed)
2 cans coconut milk (or 1 can coconut milk + 2 cups of cashew milk)
3 handfuls of kale, chopped
1/2 cup sundried tomatoes, chopped
juice of 1 lemon
2 tsp ground ginger + 1/2 tsp salt

Saute 1 onion, 4 garlic cloves and 2 tbsp ginger oven medium heat until translucent.

Add chickpeas, coconut milk (or coconut + cashew milk), kale, sundried tomatoes, juice of 1 lemon, 2 tsp grond ginger + 1/2 tsp salt.

Bring mixture to a simmer and cook for 10-15 more minutes.

Once done pour over quinoa. It also goes well with sweet potato.

Crispy Cauliflower
1 head of cauliflower, broken into florets
3/4 cup panko breadcrumbs 
6 tbsp fine breadcrumbs *if you want to just use 1 kind of breadcrumbs you can use 1 and 1/4 cups
1/2 cup chickpea flour
3/4 cup water
Sauce
3 tbsp soy sauce, low sodium
1 tbsp rice vinegar
1/4 cup grade A maple syrup
1 tbsp sesame oil
1/2 tsp ground ginger
1/2 tsp red pepper flakes (or to taste)
1 cup water
Cornstarch slurry: 2 tbsp cornstarch + 2 tbsp water
2-3 stalks of green onion, chopped
Sesame seeds for garnish

METHOD

Preheat oven to 425F (218C). Cut the cauliflower in half and cut the green bottom off.

Break the cauliflower into medium sized florets. Then cut the stems off. The florets should all be around the same size.

Prepare chickpea flour 鈥渆gg鈥 wash by adding chickpea flour and water into a bowl and mix together until smooth.

Add the breadcrumbs into a big bowl.

Using one hand add a floret into the chickpea flour 鈥渆gg鈥 wash and drip off excess.

Then using the other hand coat the floret in the breadcrumbs. I also like to sometimes shake the bowl to coat it. Using a wet hand and dry hand will help make the process more efficient.

Place the cauliflower on a baking sheet lined with parchment paper.

Once they are all on baking sheet place in the oven for 20-25 minutes. They will be golden and look dry when they are done.

While they cook prepare the sauce. First, make the cornstarch slurry by adding the water and cornstarch to a small bowl and whisking together.

Then in a big bowl or measuring add all of the sauce ingredients (not the slurry yet). Whisk together.

Once it is whisked add the slurry in and whisk again.

Heat the sauce up on a low heat in a pot on the stove. It should start out light brown and milky looking and turn dark and slightly more transparent. Stirring it every so often for about 5-10 minutes.

Once the cauliflower is done cooking let it cool for 15 minutes before tossing in the sauce.

Recipe:
Serves 4鉅
Ingredients
1 teaspoon coconut or avocado oil鉅
1 shallot (or onion), chopped鉅
2-3 cups shiitake or brown mushrooms, sliced鉅
3 garlic cloves, grated鉅
2-inch piece fresh ginger, grated鉅
2 teaspoons red Thai curry paste鉅
1 tablespoon tomato paste鉅
1 large head of broccoli, chopped鉅
1 pack tempeh, cut into 1-inch squares鉅
1 and 1/2 cups coconut milk鉅
1/2 cup water鉅
3-4 tablespoons organic tamari (or soy sauce)鉅
2 packs millet & brown rice ramen noodles (140 g)鉅
Toppings (optional): cilantro, lime juice, toasted cashews, sesame seeds鉅
鉅
Directions鉅
Heat oil in a large pot over medium-low. Add chopped shallots (or onions) and mushrooms and saute for about 5-7 minutes until they start to soften鉅
Add garlic, ginger, and a small pinch of sea salt, with a splash of water if the pan is dry. Mix in the red Thai curry paste and tomato paste and stir to combine鉅
Add the broccoli stems, tempeh, coconut milk, and water, and bring to a gentle boil over medium-high. Then reduce heat to medium-low and let it simmer for about 10 minutes until the sauce thickens a bit. Add the broccoli florets 2 minutes before removing the pan from heat鉅
Cook ramen noodles according to package instructions and add to the soup. Season to taste with tamari (or soy sauce) and serve with fresh lime, cilantro, toasted cashews, and sesame seeds. Enjoy!

1 and 1/2 cups coconut milk鉅
1/2 cup water鉅
3-4 tablespoons organic tamari (or soy sauce)鉅
2 packs millet & brown rice ramen noodles (140 g)鉅
Toppings (optional): cilantro, lime juice, toasted cashews, sesame seeds鉅

Directions鉅
Heat oil in a large pot over medium-low. Add chopped shallots (or onions) and mushrooms and saute for about 5-7 minutes until they start to soften鉅
Add garlic, ginger, and a small pinch of sea salt, with a splash of water if the pan is dry. Mix in the red Thai curry paste and tomato paste and stir to combine鉅
Add the broccoli stems, tempeh, coconut milk, and water, and bring to a gentle boil over medium-high. Then reduce heat to medium-low and let it simmer for about 10 minutes until the sauce thickens a bit. Add the broccoli florets 2 minutes before removing the pan from heat鉅
Cook ramen noodles according to package instructions and add to the soup. Season to taste with tamari (or soy sauce) and serve with fresh lime, cilantro, toasted cashews, and sesame seeds. Enjoy!
