While I agree that seitan doesnt always look the most appetising, I think 90% of the time it tastes great. @_firebirdhope_  in Manchester had a pretty well seasoned and flavourful chixken burger and fries were nice too. Worth trying!

My uncle sent me an early Christmas gift, an instant pot. So now currently experimenting/ obsessing over that. Not a great or styled picture (hello winter!)... But everything is crazy fast in this thing. And my favorite part. Zero counter mess! Which means minimal cleaning work💃. Pav Bhaji in 8 mins!  Stay tuned for more recipes .

Easy Protein cookies : Moka Version 🍫☕🍪 Makes 8 cookies of around 45g each .

1 scoop of chocolat or Moka Protein Powder ( I used Raw Nutrional coffee wafers) 
30g lupini flour 
30 g Raw Cacao powder 
40 g Coconut flour 
2 tsp Baking Powder 
30 g ( 2 tbsp) Raw Almond butter 
3/4 cup brewed coffee of choice 
Around 15 drops of stevia chocolat ( or other flavor ) 
Generous Pinch of pink salt .

Mix all the dry ingredients in a big bowl , slowly add the nut butter and water. 
Mix until it's moist and a bit sticky but still a bit crumbly to. 
Preheat the over at 350°
Separate in 8 pieces and
bake for 30 mins .

Calories per cookie: 90
Protein: 7.5 g 
Fat: 3.5
Carbs: 7.5 g 
Fiber: 4

About two hours ago, at the mall, a volunteer at a Forest and Bird stall tried talking to me. Forest and Bird is a conservation organisation in New Zealand. Organisations like this always ask for money and since Forest and Bird are obviously speciesist, as indicated by their name, I just walked past and avoided eye contact. The second time I walked by their stall, I decided to hear what they had to say. This is how the conversation went:
Them: Hi, do you know our organisation?
Me: I've heard of it.
Them: We are the biggest organisation in New Zealand that protects birds and forests. Unfortunately, our birds are at risk, due to pollution especially in our water and rivers. And we work to help the environment and we also deal with pests.
Me: Why is there so much pollution?
Them: People used to not pollute as much. They recycled. Today they don't recycle and they litter.
Me: I thought that, in New Zealand, animal farms were polluting the water.
(I could tell from their expression that they did not expect to hear this.)
Them: Yeah, them too.
Me: So it's the animal farmers who are polluting, as well as the people who buy their products, such as yourself.
Them: Oh, not me. I don't eat meat.
Me: Are you vegan?
Them: Yes.
Me: So am I. I'm vegan because I care about animals, all animals, not just birds. In fact, the only animals who are pests are humans. You say you're vegan, so you should know better. I can't support an organisation that's speciesist.
Them (looking unconfortable): Okay. Enjoy your day.
Me: You too.

Recipe 👇
For the French Toast:
8 slices vegan white bread, left out on the counter for about an hour to get a little stale
1 ½ cups vegan egg replacer (like just egg, follow your heart vegan egg or tofu)
1 tbs oat milk
1 tbs maple syrup
2 tsp vanilla
½ tsp cinnamon
1/8 tsp salt
4 tbs vegan butter

Sandwich Fillings:

Vegan Egg substitute of your choice
Vegan Breakfast sausage, vegan bacon, or vegan deli ham slices
4 slices vegan cheddar or other vegan cheese of your choice
More vegan butter, oil, or spray to cook the vegan eggs with
Extra maple syrup for serving!

DIRECTIONS
Whisk together vegan egg, oat milk, maple syrup, vanilla, cinnamon, & salt in a shallow flat container or pie dish.
Heat a large pan over medium-high heat, I had mine at a 6 on my electric stove. Add 1 tbs vegan butter.
Dunk 2 pieces of bread into the egg mixture, making sure to evenly coat both sides, then add to the pan once butter is melted and hot. Cook 3-4 minutes on each side, set aside on a plate. Repeat until all bread is used.
While the French toast is cooking, heat another large pan and cook up your vegan egg or tofu according to package or recipe.
If you’re using sausage, cook according to package instructions. Now assemble your sandwiches by loading them up equally with vegan egg, sausage, and cheese! Serve with warm maple syrup if desired.

Mushrooms chestnut sticky rice bowl .

A delicious gluten-free comfort food that is scrumptious and perfect for any day! .

INGREDIENTS
~ 2 cups of glutinous rice (rinse until water turns clear, and soak overnight, then drain well)⁣⁣
~ 1/2 cup roasted chestnut⁣⁣
~ 1/4 cup sliced Chinese/Shiitake mushrooms⁣⁣
~ 7-8 shallots, finely sliced⁣⁣
~ 2 teaspoons sesame oil⁣⁣
~ oil, salt to taste⁣⁣
~ chopped scallion & fried shallots⁣⁣
~ water⁣⁣
⁣⁣
🍃Sauce: 3 tablespoons soy sauce, 2 tablespoons Chinese cooking wine, 1 tablespoon organic sugar, 2 teaspoons stir fry sauce (optional), 1-1.5 teaspoon salt, 1/2 teaspoon white pepper⁣⁣ .

DIRECTIONS
1. In a heated non-stick pan with 2 teaspoons oil, sauté shallots until fragrant, then add mushrooms & continue to cook until mushrooms turn light brown. Add sauce & continue to sauté & drizzle with sesame oil. Turn off heat. ⁣⁣
2. Place drained glutinous rice in a pyrex bowl & add 1 cup + 1/3 cup water. Then, spread mushrooms mixture on top and add chestnut. Steam rice in high heat for 30-35 minutes. Using a chopstick/fork, fluff rice by mixing mushrooms mixture until well combined. Season if needed (added few drizzle of dark soy sauce for color😁). Close lid and steam for another 20-25 minutes. (Be sure you have enough water for steaming). 3. Turn off heat & let cool a little, top with fried shallots & chopped scallions before serving. I paired it with some sautéd bok choy .

Using a chopstick/fork, fluff rice by mixing mushrooms mixture until well combined. Season if needed (added few drizzle of dark soy sauce for color😁). Close lid and steam for another 20-25 minutes. (Be sure you have enough water for steaming). 3. Turn off heat & let cool a little, top with fried shallots & chopped scallions before serving. I paired it with some sautéd bok choy .

Fresh basil is a powerhouse when it comes to antioxidants and is also known to be anti-inflammatory food! Pesto is freezer friendly too and one of the best things to keep on hands for quick meals.

Recipe: 
Vegan Kale Pesto 
Level 1

Ingredients:
1 Bunch of Curly Kale 
2 Garlic Cloves 
1 Medium Shallot 
1 1/2 Lemons Juiced 
1 Cup Raw Walnuts 
½ Cup Extra Virgin Olive Oil 
1 Teaspoon Nutritional Yeast (optional) 
1 Teaspoon Himalayan Pink Sea Salt 
1/2 Teaspoon Black Pepper

Instructions:
Fill a large pot with water and bring to a boil. 
Remove stems and clean kale. 
Place peeled garlic and shallot in boiling water for 3 minutes. 
Remove garlic and shallots form water and dry on a clean kitchen towel to drain off excess water. 
Working quickly place kale in boiling water. 
Swirl the kale in the water and immediately remove (this step helps mellow out the sharp/bitter bite of raw garlic, shallots, & kale). Place blanched kale in a cloth lined colander to drain excess water. 
Add kale and remaining ingredients (except olive oil) to the bowl of the food processor. Pulse a few times and then turn it on. 
While it is processing drizzle in olive oil into the container. 
You are looking for a choppy/creamy consistency.
Feel free to taste & make your own adjustments. 
I like to make a double batch and freeze in small containers for quick meals in the future.
Serving Suggestions: Use pesto on zucchini noodles, shrimp, chicken, or even vegetables.

I haven’t had French food in 25 years since I was in France. French restaurants (especially the ones where I lived in Texas) are definitely not vegan friendly. So when I learned of an authentic French restaurant in NYC that is all #vegan I had had HAD to try it. Delice & Sarrasin is a gourmet vegan French restaurant and creperie. Every time I looked at their menu the past few days I changed my mind about what I wanted to try. I settled on the coq au vin. A classic French dish with a delicious vegan spin on it. 🍓Had some overnight oats today because I was lucky enough to remember I had some chia seeds in my backpack from a previous trip. 🥳 Good timing because it’s nice and warm today and the craving for something cool took over. 😚

Strawberry and Cashew Overnight Oats
1/2 cup rolled oats
2 tsp chia seeds
1/2 cup unsweetened vanilla almond milk 
Pinch of salt
Pinch of salt
1/2 cup diced strawberries
2 tbsp cashews

Add all ingredients to a mason jar or Tupperware container. Give a good stir and place in fridge to thicken overnight. Served this with some banana sliced (mixed half with my oats and the other half on top of my bowl), extra cashews, nibs, pepitas, and puffed millet. 🍓

7-10 sheets rice paper
Vegetables:
1/2 avocado sliced
1/4 cup each of green, red and yellow pepper sliced
One zucchini spiralized or finely cut
One carrot spiralized or finely cut
One cucumber spiralized or finely cut
1/4 of a small red cabbage, shredded
1/2 can chickpeas
Noodles:
100-150 g cellophane noodles or rice noodles
Pinch of sea salt

Instructions
1. Boil the noodles as per the instructions on the packaging, discard the hot water and rinse with cool water. Optional: Color one part of the noodles with beet juice and stir until all the noodles are pink. You can color the other part with a little bit of spirulina powder (for a nice turquoise color) or with turmeric powder (for a nice yellow color), get creative!
2. Finely cut or spiralize your veggies and fruits (in case you want to use fruits too)
3. Roast chickpeas with a little bit of oil and soy sauce (optional) in a saucepan
4. Fill a large bowl or pot with water and completely dip your rice paper in the water for about 10-20 seconds. I am using the following brand of rice paper
5. I used a lightly greased parchment paper on my working surface, to avoid that the rice paper sticks to the surface. Place your (cooled) noodles and veggies in the center of the rice paper and a bit in front of it
6. Roll it up carefully, it's a bit tricky since the rice paper is very thin and can burst easily. I always seal the sides first
7. Dip in sauce, of choice, for example, soy sauce or peanut butter sauce.

How to survive the busy end of the year period?

Let me introduce to you this new post format! The #MondayBizTips 💪🏻
Few days ago, I did a survey to know if you would like me to write about my entrepreneur journey and other business topics. As you answered YES 😃, here we go.
But, if you are here only for the food, don’t worry, it’ll still be 90% of my content.

𝗔𝗿𝗲 𝘆𝗼𝘂 𝗯𝘂𝘀𝘆 𝗿𝗶𝗴𝗵𝘁 𝗻𝗼𝘄? I’m, as I haven’t been since the beginning of the year. On one side, it’s very exciting, but on the other side, it can quickly become overwhelming. Stress can arise in no time and if we aren’t prepared to face it, it can become a daily nightmare. I went through such nightmares in the past and learned a lot about how to manage my work and my time to avoid stressful situations but also how to deal with stress when it’s settled.

𝗧𝗵𝗲𝘀𝗲 5 𝗮𝗰𝘁𝗶𝗼𝗻𝘀 𝗵𝗲𝗹𝗽 𝗺𝗲 𝗮 𝗹𝗼𝘁.
1️⃣ If I have something to do that take less than 2 minutes, I do it immediately. What is done is no longer to be done.
2️⃣ I write absolutely every single professional and personal task on a to do list. It frees your mind and you can fully focus on your current work. At the same time, you are sure you won’t forget anything. I’m using the app @todoistofficial for mobile and desktop. But there is plenty of other apps. 
3️⃣ Prioritization. We can’t do everything. Nobody can. I’m planning the most important tasks first and the quantity of work that’s feasible within the day. If you over plan, you’ll start the day with unnecessary stress. 
4️⃣ When an overwhelming feeling arise, I close my eyes and take 3 deep breaths. It allows your body and mind to calm down quickly. 
5️⃣ My 10 minute morning mediation has completely changed the way I start the day, especially when life is busy. I’m using the guided mediation app @calm and really recommend it to anyone who would like to give a try to mediation.

I hope these tips and resources will help you end this year more calmly.

ENG Persimmon Chia Parfaits !
If you like persimmons as much as I do this very persimmon dessert is for you!
As you probably know the persimmon can be eaten firm and crispy but also very ripe and juicy 🤤 which is my very favourite🙋‍♀️ So let’s enjoy two varieties in one jar : very ripe in mousse and crispy in toppings🙃 • Persimmon:
3-4 persimmons, very ripe and juicy and 1/2 orange, juiced
Blend .
• chia pudding: 1/4 c chia seeds, 1 c almond milk, 1 tsp maple syrup, 1-2 tbsp yoghurt ( I used coco) • yoghurt ( of your choice) .

🌱Creamy sun-dried tomato + hummus tahini pasta🌱Easy pasta with good fats and protein. Use bean or lentil pasta for even more plantbased protein. Seriously delicious friends.😋
🌱Recipe: blend 3 sun-dried tomatoes (the variety that comes in oil), 1/4 cup tahini, 1/2 cup hummus, (optional:1 tsp hot sauce), 1-1/2 tbsp fresh lemon juice, 2 tbsp water. Add more water or olive oil as needed when blending. It shouldn’t be perfectly smooth, just well-incorporated with small pieces of sun-dried tomatoes. 
Mix with desired amount of favorite pasta. Top with more chopped sun-dried tomatoes and red chili flakes if desired.
