Oi gente 🙌 essa foto ainda é do último feriado, então resolvi postar antes que ela se perca na galeria! 🙃

Essa receita poderia facilmente se chamar "a mais pedida", seguida é claro, de outro  clássico, o tofu mexido... 🤣🤣

Eu conheci esse pãozinho um pouco antes de fazer a transição, acho que em 2016, quando eu já não comia carne, mas ainda comia muito queijo (pra mim o queijo foi o mais difícil de retirar da alimentação, mesmo sendo intolerante à lactose, eu ainda consumi aquelas opções cheias de enzimas por um tempo). 😝😵

Essa receita foi uma luz no meu caminho 😂🤣 eu percebi que era BEM possível viver sem queijo, e o melhor, podia continuar comendo pão de queijo*. 😊

Com o tempo fui descobrindo novas receitas e substituições para o queijo de leite de vaca, e tbm aprendendo e pesquisando mais e mais... enfim, esse pãozinho me acompanha, e por isso trouxe pra vcs!

Currently plotting Thanksgiving recipes and... ummm... HELLO Pumpkin pie chia pudding and apple pots🍁🍂 My little sister has been a mystery lately. She loves the recipes I cook, but still wants to ban “healthy” food on principle for Thanksgiving. Girl, you are getting my chia pudding and my purple Japanese yam spiced vegan pie anyway! What are you guys making for Thanksgiving?

The recipe (makes 2 pots)
- 1/3 cup chia seeds from @nutiva - 1 1/3 cup @malkorganics almond milk - 2 big spoonfuls almond yogurt - 1/4 tsp pumpkin pie spice from @penzeys2.0 - 1/4 tsp pumpkin puree
- 1/4 tsp turmeric
- 2 scoops protein powder (optional)
Combine all ingredients together and let them sit as the chia seeds absorb the liquid.
•
- 1 apple, cut into mini slices
- 1/4 tsp pumpkin pie spice
- a touch of coconut oil
•
Sauté the apple in the coconut and pumpkin spice.
•
Add the chia pudding to the pots, add the apple, then top with extra plant yogurt and top with cinnamon and start anise if you like!

Dinner today was a simple + easy but delicious meal. Not going to lie I’ve been feeling mentally drained over the last day or two with work + assignment work so sometimes I haven’t felt like cooking fancy’ meals but I’m still trying which is good. This is saucy plum tomatoes on toast with cauliflower hash browns + I tried the @frysfamily southern style tenders which are so so good 🤤🤤

Tried this new Chinese vegetarian restaurant in Chinatown! The soup is made of 18 vegetables and fruits, 10 kinds of Chinese herbs 🌿 feel warm and cured after having such nourishing Chinese meal 🍵 the main dish I had was “vegan cod & vegan fish ball & 7 grains rice”
Vegan cod and vegan fish balls are imported from Taiwan and made of soy proteins. People often think this fake meat is a contemporary, Western thing, but actually it's not, it's Chinese!There’s record that vegetarian cooking existing in the country since the late Han dynasty (206 BCE to 220 CE) when the Buddhism religion was brought by Indian missionaries to the country. - 4 bananas frozen⁣
- 1/4 cup almond milk unsweetened⁣
- 3 tbs instant coffee⁣

- 1 cup dates pitted⁣
- 1/3 cup water from soaking dates⁣
- 1/2 tsp pure vanilla extract⁣
- Pinch of Salt⁣

In a high speed blender, blend the frozen bananas with the almond milk. ⁣
Add the instant coffee, and blend well. ⁣
𝘊𝘢𝘳𝘢𝘮𝘦𝘭⁣
Soak your dates in water for about 20 minutes. ⁣
Drain your dates, but save 1/3 cup of the date water. ⁣
In a small blender, add the soaked dates, date water, pure vanilla extract and salt.⁣
Blend until smooth-like caramel consistency is achieved. ⁣Njoy!

When I was young my mother use to make me drink fresh squeezed orange juice with an egg beaten into it.  It was gross 🤮 but she believed it was healthy.  Now, I am making smoothies for her every morning 💕 she immediately noticed the difference and they taste good! 😁

200ml passata 
1 tbsp tomato puree
1/2 stock cube
1 large carrot
1/2 white onion
1/2 tsp thyme and sage
1 medium baking potato
Salt

🌱 Preheat the oven to 200°C🌱
🌱 Mix the stock cube with a large cup of hot water. Dice the onion and fry in a pan with oil. Place the lentils in the pan with the passata. Add the stock, puree, herbs, salt and pepper. Cook on medium heat until fully combined, and the lentils are soft. 🌱
🌱 slice the potato thinly and boil for 3 minutes. 🌱
🌱 place the lentils in an ovenproof dish, top with potatoes, drizzle with olive oil and sprinkle with salt.🌱bake for 15-20 mins or until the potatoes are golden🌱

It’s nearly winter time which means...HOT COCOA IN BED ALMOST EVERY NIGHT👌🍫❄️
But what about amping up your usual cocoa with some delicious sweet aquafaba cream on top of a coconut cream cocoa? Sounds good to me. And although this cream is not exactly fast to make, but IT WORTHS THE FUSS 100% 
So let’s just get to it shall we —————————————————
COCOA WITH AQUAFABA CREAM
Aquafaba 1/4 cup (you will definitely have extra but if you beat less than that, it won’t get fluffy easily)
Maple syrup 1 tbsp
Sugar ~1 tbsp (or sweetener I used stevia 4 drops) 
Cocoa 1 1/2 tsp
Coconut cream 1 tbsp
Plant milk 1/2 cup 
Water 1/4 cup
Maple syrup 1/2 tbsp
Recipe: ~To make aquafaba cream to a bowl add aquafaba and beat on height speed for 5-7 min, then add the maple syrup and sugar (in batches) or sweetener and beat for more 5-7 min until stiff peaks
~In a pot combine milk, coconut cream, maple syrup and bring to a boil
~When boiling cut the heat and add cocoa, stir
~Serve the cocoa with the aquafaba cream on top and cinnamon
DONE!

Por encima le puse salsa de tomate napolitana, levadura nutricional triturada con unas nueces a modo de "parmesano", champiñones, cebolla, pimiento de piquillo, aceitunas, guindilla fresca, pimienta negra, sal y un chorrito de AOVE

Para que la masa quede más crujiente la horneo primero sola 10 minutos a 200°C y después con los ingredientes unos 15 minutos, et voilá! 😍😍😍😍

1.If you’re not using fresh noodles and instead using dry rice noodles prepare the noodles according to packet instructions.⠀

3. Add the noodles to the vegetables and mix…the noodles should soften after 2-3 minutes. ⠀
4. To a small bowl combine soy sauce and sriracha. Mix together then pour over the noodles. Fold gently to combine, for the sauce to coat the noodles evenly and to caramelize. Letting cook for 4-5 minutes.⠀
5. Turn off heat and serve immediately.⠀

Good for 2-3 servings

400g (2 cakes) cooked udon noodles* 
1 red bell pepper, sliced into strips
1 240g block extra firm tofu, drained and sliced into strips
½  large onion, sliced into strips
1 small carrot, sliced into strips
4 cups (200g) shredded cabbage 
1 tbsp neutral oil
Sesame seeds, for garnishing
Chopped spring onions, for garnishing
*Note Feel free to use other noodles if you’d like!

Sauce Ingredients
2 tbsp soy sauce or liquid aminos
1 ½  tsp sriracha, adjust according to desired spice
¼  cup room temp. water
3 tbsp coconut sugar
1 tsp sesame oil
½  tbsp cornstarch

1. Heat the oven to 350F. On a lined baking tray, bake the tofu until lightly golden for around 25 mins. You can opt to pan fry the tofu in some oil if you’d like.
2. Mix all the sauce ingredients together. Make sure the cornstarch is diluted.
3. Heat a pan. Add in 1 tbsp oil. Sauté the onions until tender. Add in the bell peppers, carrots, and cabbage. Sauté until cooked, around 10 minutes. 
4. Add in the tofu and cooked noodles. Pour in the sauce mixture. Sauté for another 3-4 minutes until the noodles have absorbed the sauce. Turn off heat and then garnish with some sesame seeds and spring onions, if desired. Enjoy while hot!

There is nothing better on a hot summer day  then a fruit salad made with delicious @vicstrawberries, as  they are sweet, plump and juicy 🍓  Victoria has the ideal growing conditions to produce such amazing strawberries. The season for this beautiful Victorian Strawberry has just started in November so I will be enjoying them through the summer. ❤️ It makes me so happy as they are my number 1 favourite fruit. .
Strawberries are super healthy as they are excellent source of Vitamin C and manganese as well as contain folate and potassium, so adding them to my diet daily is a must.  So for all my strawberry lovers enjoy the Victorian strawberry season! .

400g squash, baby pumpkins and/or carrots
1 can light coconut milk
1/2 cup vegetable stock
1/3 cup nutritonal yeast 
4 garlic cloves, minced
1/2 lemon, juiced
2 tsp smoked paprkia
1 tsp mustard
Pinch of sea salt and black pepper
1.5 tbsp tapioca flour
2.5 cups pasta of choice
.
'Parmesan' Topping
1 cup panko breadcrumbs
1/4 cup nutritonal yeast
2 tbsp butter
.
Preheat oven to 180•c and roast squash for 30 mins, until you can pierce easily with a knife. I find it easiest roast my squash whole and unpeeled then scoop out the flesh, but you can peel and chop before roasting if you prefer. Keep the oven on.
Add roasted squash flesh to blender with coconut milk, stock, nutritonal yeast, garlic, lemon juice, smoked paprika, mustard and salt n pepper. Blend on high until smooth and creamy. 
To prepare the topping heat a skillet or frying pan to a medium heat. Melt butter and add panko breadcrumbs, stirring until toasted and golden. Set aside. To a food processor, add nutritonal yeast and the toasted breadcrumbs and pulse a few times to combine.
Cook pasta according to instructions. Drain and set aside. Add sauce to the pan and heat to a simmer. Add in tapioca flour and stir well with a whisk until thick. Add cooked pasta to the sauce, and pour into a large skillet or baking dish. Sprinkle with the Parmesan topping and cook in the oven for 10-15 minutes, until golden and crispy on top.
