When in Denver 💁🏽‍♀️ @watercoursefoods makes some of the best vegan brunch I have ever had the privilege of devouring. Today I tried the Chick’n and Waffles, made with seasoned crispy cauliflower, “cheddar” and chive waffles, “bacon” jam, and maple syrup. So👏🏽freakin👏🏽good👏🏽! Even my omnivorous future-father-in-law gave it a 10/10😋

Vegan Tofu Ricotta Butternut Squash Ravioli with Browned Butter by @3.bunnies

Ingredients

For the filling
8 oz of crumbled tofu
1 tbs of nutritional yeast flakes
1/2 tsp of apple cider vinegar
3/8 tsp of pink salt
Dash of black pepper
1 1/4 cups of minced butternut squash

For the ravoli
2 cups of semolina flour
2 cups of all purpose flour
1 tsp of garlic powder
1/2 tsp of pink salt
1 cup of aquafaba
1/4 cup of filtered water + 1tbs and 1 tsp

For the butter
1/3 cup of vegan butter
A few sprigs of fresh oregeno
1/2 tsp of black pepper

Directions
1. In a bowl combine first 6 ingredients. Mix well and set ricotta aside.
2. Preheat oven to 400° F place squash onto a greased baking sheet and bake for twenty minutes.
3. For the ravioli combine all dry ingredients and all wet ingredients mix well and add wet to dry. Mix until dough forms and knead well. Cover and set in fridge for 30 minutes.
4. Remove squash from oven and set aside. Grab dough and roll out into a very thin rectangle. Add a large pinch of ricotta and squash into small piles on one half of the dough sheet. 
5. Fold over other half of dough sheet and press a ravioli stamp around each pile. In a large pot bring water to a boil.
6. Reroll dough and repeat process until finished. In a small pot on medium heat add butter and garlic powder. Let butter simmer for around 4-5 minutes or until browned. Remove from heat and add oregeno.
7. Boil raviolis until they float to surface. Remove and roll in butter. Plate and add oregeno and finish with fig slices and bread crumbs. Enjoy

I tried this Jackfruit Thai Red Curry from Asda last week and was a bit disappointed by it. It had a strange bitter taste to it which was a real shame as I loved all textures in it; the bamboo shoots, water chestnuts and the jackfruit. I served it with rice that i cooked peas in with and stirred in chopped spring onions once it was cooked. I also topped the curry with toasted coconut and the rice with crispy onion pieces. Also served with Iceland No Duck Spring Rolls which were absolutely banging!

For the first time in yonks I went to @pizzahutuk to try out their vegan pies. Always fun to hit up the salad bar and this pizza - the Vegan BBQ Jack N Cheese - was pretty nice. They were a bit stingy on the cheese but it was tasty and fun. I was served by a lovely (vegan ✌🏽) waitress too! 🌿🍕

No chicken chicken wrap..
A bit pricey but the portions are big and everything is fresh.

Lemon Poppy Seed Loaf! 📷 by @alexafuelednaturally

Recipe: Makes 10 slices
3 cups all-purpose flour
1 cup organic cane sugar
1 tsp salt
1 tbsp baking powder
1 3/4 cup almond milk, unsweetened (warm)
1 cup refined coconut oil, melted
2 tsp vanilla extract
4 tbsp lemon juice
2 tbsp lemon zest
4 tbsp poppy seeds

Glaze:
1 cup organic powdered sugar
1-2 tbsp lemon juice

Method:
1. Preheat oven to 350 degrees F and grease a 9"x 5" loaf pan with coconut oil and lightly dust with flour and set aside.
2. In a large bowl whisk together warm almond milk, melted coconut oil, vanilla extract, lemon juice and lemon zest.
3. Next add cane sugar to the liquid and whisk. Then add salt,  baking powder and mix.
4. Gradually add flour  1 cup at a time to the liquid, whisking in between.
5. Once batter is mixed well and is smooth...To the batter, add 4 tbsp of poppy seeds and mix until well incorporated.
6. Grab your greased pan and pour batter to the pan, spread evenly.
7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan at least 10 minutes.
9. For the glaze simply place powered sugar and lemon juice in a small bowl and whisk together until smooth.
10. Pour the glaze on the loaf and spread it around to fully cover the top of the bread. Allow the glaze to harden for 15-20 minutes, then slice and enjoy

We ended our weekend with delicious homemade pizza!🍕😍 We made our own crust and topped it with onion, broccoli, sweet corn, green pepper, tomato, chickpeas, zucchini and vegan cheese. This is the best dinner!😍
.
Crust:
• 150 g flour
• ½ teaspoon salt
• 75 ml warm water
• 10 g fresh yeast (or 5g dry)

Put flour in a bowl and add salt on the outer circle, put prepared yeast and warm water in the middle and mix it together until you get a soft dough (add water if it is too dry and flour if it is too sticky). Cover it and let it rest in a warm place for half an hour. When dough has raised put it in a pan and get creative. Bake pizza on 200C (390F) for 20-30 minutes.

Midve sva zaključili vikend z okusno domačo pico. Obložili sva jo z bučkami, zeleno papriko, paradižnikom, brokolijem, koruzo, čebulo, čičeriko in veganskim sirom😍

Testo sva naredili iz:
• 150 g moke
• ½ žličke soli
• 75 ml tople vode
• 10 g svežega kvasa (ali 5 g suhega)

Moko daj v skledo in na sredini naredi vdolbino. Posoli po zunanjem robu, na sredino daj kvas ter mlačno vodo in dobro pregneti. Testo pokrij in pusti vzhajati na toplem vsaj 30 minut. Oblikuj testo in nanj položi poljube sestavine. Peči v pečici na 200C, 20-30 minut.

Some cheesecake bites I made yesterday. Been tweaking this recipe for a while now and I think I’ve finally perfected it! Not only are they vegan, gluten free, and nut free, but they’re also so damn good lol

RECIPE:
Crust:
~ 1 cup + 2 tbsp gluten-free rolled oats (blended into oat flour)
~ 2 tbsp maple syrup
~ 1 tbsp coconut oil (melted)
~ 1 tbsp applesauce (or more coconut oil)

Filling:

1) Stir together crust ingredients and press into a lightly greased or lined muffin tin. (For cheesecake bites use a mini muffin tin)
2) Combine filling ingredients and set aside.
3) Add 1-2 tsp of jam to each cup before adding the cheesecake filling.
4) Bake at 400F for 10-15 minutes.
5) Add more jam and fresh berries on top as desired

Some cheesecake bites I made yesterday. Been tweaking this recipe for a while now and I think I’ve finally perfected it! Not only are they vegan, gluten free, and nut free, but they’re also so damn good lol

RECIPE:
Crust:
~ 1 cup + 2 tbsp gluten-free rolled oats (blended into oat flour)
~ 2 tbsp maple syrup
~ 1 tbsp coconut oil (melted)
~ 1 tbsp applesauce (or more coconut oil)

Filling:

Sooo I made another chocolate oat bake thing tonight lol 🤪🤪
Decided to tweak it a bit and turned out even better than last nights !!
For this I mixed 20g oats with 3 tbsp of plain flour, 2 tsp cocoa powder, 1/2 tsp cinnamon, 1/2 tsp of baking powder, 3 tbsp melted pure spread (could use any oil) and cooked it in the oven for 20 mins gas mark 6.
Then I topped it off with peanut butter 🤤🤤 I added veggie mini marshmallows (swipe for which I used) and fruit to this one. Gooorgeous.

Meine Lieben, bei mir schlug es  heute wieder ein wie ein Blitzschlag und es blinkte ein Schild auf in Neonschrift: MACH DAS!😅🙈Nagut, also ab in die Testküche und alles verwüsten. Erst mal alles raus was lecker ist: Kirschen, Bananen, Kokosjoghurt, Schokolade, @simplyV Streichgenuss, Schakalade von @vantasticfoods und Kokosraspel! Man, man, man was war das lecker?! Der absolute Süßihimmel🍫☁️

tonight was the last of the fat weekend this has been, we aren’t lucky enough to have a chinese takeaway near us with clearly marked vegan options, so i made our own !!! chicken chow mein made with @icelandfoods no chick strips and wheat chilli noodles, chicken satay made with the same chicken sub, veggie fried rice, no duck spring rolls from iceland also (and chips and curry sauce because im gross 💁🏻‍♀️) swipe 👉🏻 to the end to see this amazing chicken substitute prior to the satay sauce

Tried out these funky lil nibbles from @guruji_snacks that I got in my @musclefooduk order!! SUN DRIED TOMATO CREAMED MUSHROOMS!
You guys asked for it... here it is. SO Easy and delish. Tag your mushroom lovin’ friends and grab recipe below!!!!
RECIPE
Ingredients:
1/2 cup raw cashews
2 cups filtered water
16 ounces cremini mushrooms
1 tbsp avocado oil 
1 tbsp vegan butter 
2 tbsp nutritional yeast
2 tbsp tomato paste
5-7 sundried tomatoes, sliced (I used sundried tomatoes in oil) 
1 tsp garlic powder
 1/2 tsp Salt
1/4 tsp Pepper

To serve:
Brown or white rice
Cilantro or fresh herbs 
Directions:
1. To a large pan over medium heat add 1 tbsp avocado oil or oil of choice. Add mushrooms and sauté for 5 minutes, season with salt and pepper.... then add 1 tbsp vegan butter and sauté for an additional 5 minutes.
2. In a blender combine raw cashews (no you don’t have to soak cashews ) and filtered water. Blend on high until smooth and creamy. Takes 1-2 minutes.
3. Pour the cashew milk over mushrooms, then add nutritional yeast, garlic powder, tomato paste, chopped sun dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens. Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.
4. Serve with rice, top with fresh herbs.

🌱Garlic-infused balsamic cherry tomatoes with chickpeas and fresh basil🌱 ☺️My new obsession. This recipe pairs perfectly with toast or pasta and requires very few ingredients. My kids and I were fighting over who gets the leftovers!!! Seriously!...and I won🤣
🌱Recipe: Add 2 tbsp olive oil and 4 sliced garlic cloves to a cast-iron Dutch oven (or other non-stick or cast-iron saucepan) and heat on low until garlic turns a pale gold. Add a generous sprinkle of red chili flakes and 1-lb carton cherry tomatoes (sliced into halves) and sauté another few minutes. Reduce heat to low and cover. Cook about 15 minutes, covered, until tomatoes soften. Remove lid and continue cooking on high about another 20 minutes until juice from tomatoes thickens a little, stirring regularly. Add 1 cup cooked chickpeas (rinsed and drained) and cook 5-7 minutes until chickpeas are heated through and tomatoes start to stick to pan. Remove from heat and mix in 1-2 tbsp balsamic vinegar, a few turns black pepper and salt to taste. Top with chopped fresh basil leaves. .

💙 1 tsp vanilla extract
💙 A little splash of oatmilk
Just mix everything in your blender or food processor. Then top it with whatever your heart desires. Coconut chips, frozen bluebs, kiwi berries , sugar stars, raspberries and the very last crumbs of my granola.
