Huh mikä reissu. En oo hetkeen kokenut mitään vastaavaa. Lapin kauneus ja hiljaisuus vetää sanattomaks. Nyt kun on vielä offseason, niin Äkäslompolo oli oikeesti aivan tyhjillään. Ihanaa! Lumikin tuli ihan meitä varten kuin tilauksesta. Tekis melkeen mieli spämmätä koko feedi täyteen talvimaisemia, mut sen sijaan tyydyn nyt spämmäämään samaan postaukseen useamman kuvan. Mut katsokaa nyt hei miten kaunista! 😻

Mä oon todella aloittelijajoogaaja. Lähdin retriitille nappaamalla peruutuspaikan hetken mielijohteesta, koska koin että tarviin irtioton ja rauhallisen hetken tähän syksyyn. Ennen retriittiä sanoin et en edes tiedä tykkäänkö joogasta. Mut kyllä mä jonkunlaisen kipinän löysin ja luulen et voisin ehkä lisäillä rauhallista yinjoogaa ja meditaatiota mun arkeen. ————————————————————————
Sain myös ison annoksen tassuterapiaa Ulrikan rescuekoirilta, selaathan kuvat loppuun asti (oikeesti, käytä Ultsu tätä markkinoinnissa ja retriitit myy loppuun minuuteissa!). Me joogattiin Mahatman kanssa pitkiä aikoja yhdessä 🐾💛 Seuraavat retriitit järjestetään toukokuussa ja vitsi että suosittelen kyllä lähtemään jos yhtään tekee mieli - eikä haittaa vaikket ois koskaan joogannu. Tää viikonloppu teki mulle niin törkeen hyvää. Kiitos @herkkutrikoissa, @7fellshostel ja kaikki mukana olleet, mulla oli tosi kivaa teidän kanssa 🧡

Creamy tomato pasta with mushrooms and kale⁣
150g pasta of choice⁣
1/2 large onion, chopped⁣
150g mushrooms, chopped⁣
150g fresh cherry tomatoes, chopped⁣
1/2 can canned tomatoes⁣
1/4 can coconut milk⁣
1 tbsp tamari⁣
1/2 tsp smoked paprika⁣
1/2 tsp onion salt⁣
1/4 tsp cumin⁣
1 can kidney beans, drained and rinsed⁣
2 cups kale, de-stemmed and chopped⁣
⁣
Cook the pasta according to packaging instructions. Meanwhile, add the onion and mushrooms to a non-stick frying pan and cook for around 5 minutes, until the mushrooms soften. Then, add the cherry tomatoes, canned tomatoes, coconut milk, tamari, smoked paprika, onion salt and cumin. Cook, stirring frequently, on a low-medium heat for around 3-4 minutes, then stir in the cooked pasta, kidney beans and kale and cook until the kale wilts (around 2 minutes).⁣

A bowl of Smokey Beans with some potatoes and broccoli by @theplantifulchef 😋 Check out the Smoky Beans recipe below:

​Ingredients
1 onion diced fine 
1tsp oil 
1/2tsp garlic powder 
1tbs smoked paprika
1 tin of black beans 
1 tin of chopped tomatoes 
1tsp liquid smoke 
Good pinch of sea salt

Cook onion down until translucent in oil. Add in add other ingredients and cook down over medium heat for 15 minutes until thick and delicious! Serve with rice, potatoes greens or avocado.

- 2 tbs of cooking oil⁣
- 6 bay leaves⁣

These past couple of days have been a gentle, but powerful reminder to, simply, slow the f**k down.

Most of the time, I practice balance.
Sometimes, though, I say yes to too many things and I am scared of underdelivering on promises I have made.
Most of the time, I catch sunrise.
Sometimes, though, I am so tired from prioritising my social life over sleep, that I miss it.
Most of the time, I practice self-care.
Sometimes, though, I feel so far behind on work that my mind is in a constant state of productivity.

This week, I felt overwhelmed and anxious and my body could not keep up with what I was trying to put it through. Between work, creative projects, a social life, long-distance friendships, exercise, editing, etc., my mind and my body finally said no.

Currently: writing this from bed. Going to do my best to practice self-care and the art of me-time this week. Let this be a reminder to you: drink your water, nourish your body, rest when you need to, and don’t be afraid to say no.

Tofu, Noodle & Veggie Bowl by @janetsmunchmeals 🤤 A bowl packed with so much veggies and flavour! ​.
​Recipe: 2 to 3 servings
Saute 1 block tofu cut in 1cm cubes, and a small package sliced shiitake mushrooms in bit of oil, browning on a few sides.
.
Roast a small bag of brussel sprouts (cut in half) and bundle of asparagus (tough bottom end trimmed off). Chop half of a seedless cucumber.

Dressing (2-3 servings):
Blend the following
2 T rice vinegar
1 T sesame oil
3 T avocado oil
1 T coconut aminos
1.5 tsp grated fresh ginger
1 garlic clove
1 nectarine*
1/8 tsp each kosher salt and pepper
* cook 1 diced nectarine over medium-low heat with a dash of water for about 3 to 5 minutes covered, until very soft.

Plate all the veggies over baby spinach or other greens, along with a bit of noodles. Drizzle dressing over top. Top with red chili flakes and fresh mint.

Thai Red Curry Noodles by @hannah__chia 🤤 Rice noodles in a delicious, creamy curry sauce, with crispy golden tofu and fork-tender vegetables! .
THAI RED CURRY NOODLES
Serves 3-4
Crispy Baked Tofu:
1 14-oz block tofu
1 tbsp cornstarch
1 tbsp olive oil
1 tbsp tamari
Curry:
8 oz rice noodles
1 tbsp coconut oil
2 small shallots, chopped finely
5 cloves garlic, minced
2 tbsp minced ginger
3 tbsp Thai red curry paste
half a sliced red bell pepper + 2-3 cups assorted vegetables (I used broccoli florets, fresh bean sprouts, and carrots)
1 14 oz can full-fat coconut milk
1/2 cup water, plus more if needed
3 tbsp tamari
1 tsp ground turmeric
2 tbsp coconut sugar
1/2 tsp salt, plus more to taste
2 tbsp lime juice 
For garnish: chopped cilantro, fresh basil, green onions

Instructions:
Preheat oven to 425F. Press tofu to remove water (see notes in my blog post for how to do this), then cut into 3/4 inch cubes and toss with soy sauce, olive oil, and cornstarch to coat. Spread cubes evenly on a piece of parchment paper and bake for 25-30 minutes, until golden brown and crispy. In the meantime, place dried rice noodles in a bowl of warm water to soak until pliable (skip if using fresh rice noodles).
In a large saucepan, heat coconut oil over medium heat, then sauté shallot, ginger, and garlic until fragrant and softened, about 2-3 minutes. Add curry paste and cook for one minute, then stir in bell pepper and rest of vegetables, stirring for 1-2 minutes until softened. Add coconut milk, water, tamari, turmeric, sugar, salt, and the prepared rice noodles, and simmer until noodles are tender but still have a chewy bite, about 4 minutes. (If necessary, add in more liquid while cooking.)
Stir in the lime juice. Taste and adjust seasonings as needed. Top with tofu cubes, cilantro, basil, and chopped green onions, and serve. Enjoy!

Smokey black bean + corn burger: In a food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burger patties. They shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of the patties with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes).

Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add sprinkle red chili flakes. Serve with sweet potato fries and enjoy!
