This road for us has had its ups and downs but we look at all these moments as a blessing which we take in stride and build from it. 
As usual the Canadian weather has not always been too kind to us most would say; however, the show must go on. At Sunny Boy Farm we offer a weekly Community Supported Agriculture (CSA) basket:

What is Community Supported Agriculture (CSA)- it is a way to buy local food directly from a farmer. You purchase a “share” and become a farm “member.”--CSA is an investment in your health.

With certain Land Logistics and in order to have our members continue to eat healthy Sunny Boy Farm was able to partner with another Locally Certified Organic Farm to help supplement produces in our weekly CSA basket. So I would like to give a big S/o to Black Creek Community Farm for seeing the passion and fight we here at Sunny Boy Farm are doing to help with the fight on Food Justice, Food Sovereignty and overall eating healthier on a whole. Thank you very much to the team over @BCCF and we are looking forward to doing more collarbations together.

really felt like drinking soup for lunch, so i made my go to soup😂 i just added alots of solids in so itll keep me fuller. if i had tofu i would gladly add it in😂

today's concoction;

soup- lots of dried seaweed, lots of shitake mushroom, corn, seasoned with pepper and salt

plate- chick peas, air fried potato, mix seaweed salad

....Aquela massa  em fermentação  que postei anteriormente ,resultou nessas delícias! 🥐 🥐 ....
... Difícilmente  meus pães  saem com apenas  um tipo de  farinha... Mas nesta preparação  usei sim como farinha,apenas a de trigo....
....Tudo foi diferente neste! ...a mistura da massa...a fermentação ...o tempo...a textura... a modelagem...
.....
Como ingredientes usei:
➡️500 ml de água ......
➡️1 colher (chá)açúcar mascavo (opcional)......
➡️1 colher (chá) de sal....
➡️2 colheres (sopa) de azeite .....
➡️2 colheres (sopa) de fermento biológico ou sourdough.....
➡️1/2 xic de nozes picadas.... grosseiramente...
➡️1/2 xic de sementes de abóbora.....
........
......
..O modo de fazer foi:
⏺️Misturei a água,o mascavo ,o sal e o fermento.... ⏺️Em um bowl, misturei a  farinha de trigo ,as sementes de abóbora  e as nozes.. ⏺️Adicionei juntamente ao bowl da farinha,  a mistura da água + o azeite....
....
⏺️Apenas misturei  os ingredientes com a colher de pau  e tapei com um pano e deixei descansando por  20min....Ficou como na segunda imagem que postei...
.....
⏺️Ficou uma massa +  molinha....bem maleável  e super macia....
...
▶️Após esse tempo de crescimento...comecei a dar forma ao pãozinho...
....
⏺️"Puxei" com a colher de pau essa massa em poucos movimentos... em seguida iniciei a retirada da porção da massa (a quantidade para ser um pãozinho )  com a mesma colher ! ....
.....Como eu quis dar uma forma arredonda ao pãozinho....usei outra colher para auxiliar ... Cada moldagem já  fui colocando na forma previamente  untada... ..
.....Quando estavam todos  colocados  na forma, pincelei  com azeite ... e deixei descansar por 10 min... ⏺️.....Levei assar em forno 250℃ ,previamente aquecido ,por 20 min.

Banana bread cake.
This is a flashback to when I had a #genius moment of putting my banana bread batter into a cake tin instead of a loaf tin then covering the top with granola! Yuuuummmm!!!
I just found a few pieces in the freezer. High-five to past me for organising that!! I’ve transferred them to my new reusable pouch from @littlemashies to put in the fridge so that we’ve got some delicious snacks for the weekend! 
Here is my recipe...you’ll need:
- 1 1/2 cups buckwheat flour
- 1/2 cup coconut sugar
- 1/2 cup walnuts roughly chopped
- 2 tbsp flax meal
- 3 tsp baking powder
- 2 tsp cinnamon
- 3-4 mashed ripe bananas
- 1/2 cup soy/almond/oat milk (maybe a little more depending on the size of your bananas)
- 1/4 cup olive oil
- 1 tbsp apple cider vinegar 
Then...
- preheat your oven to 175C
- mix the dry ingredients
- mix the wet ingredients
- mix them together until just combined
- pour into a lined cake tin!
- top with granola
- bake for 30-40 mins or until cooked through (I like mine a little under cooked! 😋)
- transfer to a cooling rack & leave to cool slightly before slicing up

😍💚 Sichuan spicy wontons in Sichuan garlic chili oil! 📷 by @nm_meiyee 💚💚Sichuan chilli oil recipe:
1 1/2 cups vegetable oil
5 cloves, minced 
2 star anise
1 cinnamon stick
3 tbsp Sichuan peppercorns
3/4 cup red chilli flakes
2 tsp salt

Heat the oil, star anise, cinnamon stick, peppercorns in a small saucepan over medium high until oil starts to bubble slightly turn the heat down to medium or low heat. Let it cook for 10 minutes, the seeds and pods should be darker in colour. In a separate heat-proof bowl, add the red pepper flakes, garlic and salt. Remove the aromatics from the oil then pour the oil over the red chilli flakes, and stir well. Allow to cool completely. .
*Chilli oil (to serve) 
1/4 cup tamari soy sauce
6 tbsp homemade Sichuan chilli oil 
Combine all ingredients and mix well. . *Wonton wrappers
2 cups organic white flour
1 cup boiling water 
Pinch of salt 
In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 20 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. .
*Filling 
1 block of firm tofu, drained & crumbled
250g mushrooms, diced 
200g pak choy, julienned 
1 tbsp minced ginger 
2-3 tbsp Sichuan chilli oil 
2-3 clove minced garlic 
1 tbsp sesame oil 
Salt and pepper .
In a large skillet over medium high heat, add sesame oil and cook ginger, garlic until fragrant. Add mushrooms and cook until the liquid released. Add tofu, pak choy stir-fry for another 2-3 mins. Then add the Sichuan chilli and mix well. .
To make the wontons, take a wrapper, add the filling. Wrap and firmly steal. .
Bring a large pot of water to a boil. Add wontons and cook until they are completely cooked through. Drain wontons and transfer to a serving platter. Pour the red oil dressing on top and serve

📒ИНГРЕДИЕНТЫ:
🌿 250 гр грибов,нарезать

Avocado pesto pasta with toasted pine nuts 💜 I simply cooked 3oz of pasta and then mixed it with some vegan pesto and mashed avocado, then toasted 2 tbsp of pine nuts in a non stick pan over medium-high heat for 2 min. Super quick & delicious. #veganreset #lunch
