Schnell gemacht und einfach zubereitet – darum lieben wir Currys! 😍 Heute haben wir eine asiatische Variante für dich, die dich garantiert in Urlaubsstimmung bringt: Gemüsecurry mit Tofu in Sesamkruste und Reisnudeln. Der knusprige Tofu passt perfekt zur cremigen Currysoße. Und für die extra Portion Gemüse kommen noch knackiger Brokkoli, grüne Bohnen, Karotten und Zucchini dazu. Zum Schluss gibst du noch ein wenig gehackte Minze über das Curry, fertig! Kleiner Tipp, wer keinen normalen Tofu mag, kann auch Räuchertofu oder Tempeh verwenden.

Curry soup 
3 cups vegetable stock
1/2 cup curry paste, I used massaman curry paste 
3/4 cup coconut milk 
1 tsp chili powder 
1 tbsp curry powder 
2 tbsp vegetable oil
1 yellow onion 
2 tbsp sliced lemongrass, white part only (slice off the lower bulb) 
6 curry leaves 
Salt & sugar to taste .

Wonton wrappers 
2 cups all purpose flour 
1 cup boiling water 
Pinch of salt .
Curry tofu filling 
1 block of firm tofu, drained & crumbled
1 yellow onion, diced 
1 cup pak choy, julienned 
1 cup spring onion. diced 
1 tbsp minced ginger 
2 cloves minced garlic 
2 tbsp curry paste, massaman curry paste 
1 tbsp vegetable oil 
Salt and pepper .

To make the soup 
Heat vegetable oil in a pot over medium heat. Add curry paste and cook until fragrant. Add vegetable stock and cook over high heat. Then stir in onions, lemongrass and curry leaves. Once it boils, lower the heat and allow to simmer for 10 mins. Add coconut milk and cook at high heat again. Once it boils, lower the heat. Add salt and sugar to taste. .

Filling 
In a large skillet over medium high heat, add oil and cook onion. ginger, garlic until fragrant. Add tofu, pak choy stir-fry for another 2 mins. Then add the curry paste and mix well. Stir in spring onion. Turn off the heat.

Wrappers
In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 10 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. .

Wontons
Take a wrapper, add about 1-2 teaspoons of filling. Wrap and firmly steal. .

Bring a large pot of water to a boil. Add wontons and cook until they are completely cooked through. Drain wontons and transfer to a serving bowl. Serve with curry soup, bean curd tofu and enjoy! #bestofvegan

Choc Buckwheat Pancakes by @thrivingonplants ❤️

1. In a bowl whisk together 1 cup of soy milk, 1 tsp apple cider vinegar, 1 tsp vanilla extract and 1 tbsp maple syrup.
2. In a separate bowl, add 3/4 cup buckwheat flour, 1/4 cup cocoa powder, 2 tsp baking powder, 1/2 tbsp ground flax seeds & a pinch of salt and combine. 
3. Add wet mix into the bowl with the dry mixture & stir until you reach a smooth batter.
4. Preheat a non-stick fry pan on medium heat, pour around 1/4 cup batter in to form each pancake and cook on each side for 2-3 minutes. 
5. Serve with your favourite toppings and enjoy immediately!

I served mine with fresh strawberries, strawberry coconut yogurt, peanut butter & cacao nibs.

Kartoffeln in Stifte oder Wedges schneiden und für etwa 20 Minuten in eine Schüssel mit kaltem Wasser legen (dadurch wird die Stärke abgespült und sie werden knuspriger) Kartoffelnstifte aus dem Wasser nehmen, abtrocknen und mit 1 EL Öl und 1 TL Paprikapulver vermengen. Im vorgeheizten Backofen bei 200°C Umluft ca. 20 Minuten backen und 1x wenden. Zum Schluss noch etwas Salz drüber und fertig 👌🏻 Die 2 Zutaten sind übrigens Kartoffeln und Paprikapulver, Öl hat jeder Zuhause oder?
