Cooking is a lot more than just making food.
It's a feeling,
It makes me feel life.
The kitchen is a space where I can play and get messy, but ultimately- it's a space where I can create something wonderful for myself, my family, and my friends.
Cooking comes down to a lot more than just chopping and sautéing. The way you handle and store a vegetable makes a huge difference to its flavor. For example, I love massaging my food prior to eating. It brings out the flavour, aids in nutrient extraction, and helps with digestion. It may sound ridiculous, but spend some time working with your food. I mean, you're putting it into your body. Get familiar with it and approach it mindfully.
When I began cooking I was really young and quite terrible at it. I loved letting my imagination run wild- but it would get the best of my dishes every time. Now that same imagination allows me to create dishes like this from scratch, and always without a recipe.
